Catch and cook courses are hosted by Fraser Christian experienced professional fisherman and qualified chef.

Fraser promotes an open minded and honest approach to the matters relating to sea food cookery and fishing. More recently he hosted the fish based events on behalf of Channel 4's River Cottage in Devon.

Like the idea of catching or cooking  fish? 
Catch and cook is more than just a fish cookery course, the freshest fish you ever find will always be the one you catch your self or find in a fishmonger that sources sustainable locally caught fish and shellfish.


This course is split into two halves. The first being fishing part with full instruction from the boat, this will include what tackle to use and how different baits are suitable for a diverse group of fish and shellfish. We will also cover how and where lobsters, crabs and scallops are caught.

The second half of the course takes in a trip to the local fishmonger's The Old Watch House  to meet Simon and have a run through of local fish and shellfish on offer and learn all the tricks of the trade - how to recognise fresh fish, shellfish and how best to fillet or prepare them for the kitchen.

Then it's off to Trill Farm, a real working organic farm and sustainable skills centre,  with are basket full of the freshest local seafood available.

Here you can sit back and first enjoy some local, tasty, seafood treats and a fine local beverage, before a full practical demonstration on the fish or shellfish we have caught or if necessary, bought from Simon's shop.

The demonstration will include different shellfish and fish, both round and flat fish, crabs, lobsters, mussels and oysters may be included with the odd variation depending on the season. Alongside creating a simple fish stock and every day popular dishes, smoking and preserving will also be demonstrated.

Then  enjoy the fruits of the sea with some fine local fare and a glass or two of some local delights to wash down a truly fun and tasty day!

The individual costs for the day is inclusive of all fishing, equipment, bait, fish, shellfish and all food and drinks.

Course duration: 9.00am - 5.00pm 

 The minimum age on this event is 12yrs of age. Under 16s must be accompanied by an adult.

There are no test, or exam conditions and prior experience is not required.

During adverse weather conditions that make going to sea both unsafe and plain silly, the Seafood cookery skills course will be offered as an alternative course for the day ( full details below) and will come with a £25 refund.

Seafood cookery skills course.

A master class in the preparation of some of the finest local fish and shellfish available from the local fishmonger.

The day will begin with a tasty breakfast of locally smoked kippers and poached eggs, with a cupa or two we will have time to talk about the fishing methods used locally and what range of fish and shellfish we may find at Simon's, the local fishmonger.

The freshest and finest seafood available will be on offer and after we decide on a selection, for our later cookery session, Simon will show us all the trick of the trade including gutting, filleting and how to recognise the freshest of catches in any fishmonger or shops.

With a basket or two of  fine local sustainable seafood, its back off to Trill.

When we get back there will be a demonstration and practical hands on session of the following popular fish cookery methods and recipes:

Scaling, gutting and filleting - Fish stock - Simply Baked - Pan fried - Marinaded & smoked - Perfect pies -Herbs for fish - Shellfish (Crabs, lobsters, mussels, oysters, scallops) selection will vary with the seasons - and of course the nations favourite, perfect 'Fish and chips'

Every thing that is prepared and cooked will be tasted through out the day. with a  feast of the rest at the end of the demonstrations.

Local seasonal produce from the garden at Trill will be on hand to complete the dishes, as will some fine local beverages.
